Bean Flour Cookies

On Sustainable Gastronomy Day, the Crop Trust has linked up with its partners from the Alliance of Bioversity International and CIAT to cook up a menu of dishes based on beans and millets.
Ingredients:
280 grams Wheat flour
20 grams Biofortified bean flour
225 grams Margarine
100 grams Sugar
1 Egg
1 gram Salt
1 teaspoon Vanilla essence
Method:
In a mixer, first mix the margarine and sugar for 5 minutes, then add the egg and vanilla essence. Next, add the flours previously mixed with salt, until a well-mixed dough is formed.
Finish kneading by hand.
Let the dough rest at room temperature or in the refrigerator for about 20 minutes.
Stretch the dough with a rolling pin on a floured surface and shape with a cookie cutter. Decorate the cookies as you prefer.
Place the cookies on a greased and floured tray and bake in a preheated oven at 180° C for 25 minutes. Remove the cookies from the oven and let them cool before consuming.
Fun fact about beans: Earlier this year, the Crop Trust signed an agreement with the Alliance of Bioversity International and CIAT that secures the future of their bean collection—the largest globally—forever. This means that the Crop Trust will cover a major part of the costs of the genebank operations that are essential to keep 37,936 bean accessions alive and available to researchers, breeders and farmers.
